Coffee cake panic

So, my daughter came home from school today and told me that in cookery class they are having a mother and daughter baking day, and they had to pick a recipe out of a container, and she got coffee cake.

Which i (coz i cant say no) will being going into school with her, after next weeks half term, to make together.....

"you cant fail on this mum, its important"...no pressure then!

but, really baking is something im not great at, i use every cheat imaginable...think 'add an egg' box mixes.... or i get them from the local deli......i know terrible mother that i am.

I havent met the cookery teacher so i did suggest getting her aunt to play her mum, but no she wasnt having that.

So next week im going to be stuck in the kitchen making coffee cake, over and over im sure,  honestly i know this sounds bad...but i cant even make a basic sponge....so im going to have to find a recipe....which has to be idiot proof!

  1. I will see if I can hunt down mine. I bake a lot, but all my recipes that I use are pretty simple, and I just go mad science on them from there.

    Don't fret, a good recipe, so long as you follow it exactly, should very rarely fail.

  2. Would it help knowing I messed up on my daughters birthday cake? All she wanted was a blue cake with blue icing... Ugh. Lol.

    How well is your daughter at cooking? Maybe you could have her do it all, while you "supervise"? Lol.

    1. lol...but at least you tried, i have never even attempted to make my children a birthday cake.....*hangs head in shame*

      She is ok with cooking, although mostly its savoury, but she is going to make the first attempt and fingers crossed she will pull it off :) ..i am great at supervising lol

    1. thanks Roz....oh its definitely not mine! i am dreading it..and my daughter tends to be a bit of a perfectionist so im hoping she pulls it off lol

  5. I bake all the time, but then I'm not a perfectionist, so if it turns out edible I figure I succeed! I would say definitely have her do it and you be the supervisor. Read your recipe ahead of time and make sure you have the exact ingredients. Substitution in baking can be tricky. And you might want to check your oven temperature with an independent oven thermometer because some of them can run hotter or colder than the number they say.

    1. oh im far from a perfectionist, its my daughter that is going to be the pain in the ass lol

      Oh blimey i shall have to get an oven thermometer, i have always relied on the one in the oven! Pre-heating is another thing i tend to forget...which apparently is important!
